A delicious gravy sauce can easily be made using the drippings left over after baking a rump roast.
Ingredients:-
- A rump roast: about 1.5 - 2 kilograms.
- Vegetable oil or olive oil: 2 tablespoons.
- Garlic: 4-5 cloves (finely chopped).
- Onions: 2 large ones (cut into pieces).
- Carrots: 3 (cut into pieces).
- Potatoes: 3 (cut into pieces).
- Salt and pepper powder: to taste.
- Dried rosemary or thyme: 1 teaspoon (if available).
- Beef stock or water: 1 cup.
Step 1: Prepare the steak
- Take the steak out of the refrigerator an hour before cooking and let it come to room temperature.
- Then, blot the excess moisture with a tissue paper.
Step 2: Season
- Rub the steak well with oil, salt, pepper powder, garlic and rosemary/thyme.
Step 3: Sear the steak
- Put a little oil in a pan and heat it well.
- Sear the steak on high heat for 2-3 minutes on each side until golden brown. (This prevents the juices from leaking out).
Step 4: Prepare for roasting
- Take a baking tray and spread the sliced onions, carrots and potatoes on the bottom of it.
- Place the seared steak on it.
- Pour the beef stock or a cup of water into the bottom of the pan.
Step 5: Baking
- Preheat the oven to 160°C (320°F).
- Cover the pan tightly with aluminum foil and place in the oven.
- Bake for 2 hours or until the meat is cooked through. (Remove the foil for the last 15 minutes of cooking).
Step 6: Serving
- Do not cut the meat immediately after removing it from the oven.
- Let it rest for 15 minutes, then cut into thin slices and serve with vegetables.

Ingredients:-
- Pan drippings: about 2 cups (add beef stock or water if not enough).
- Butter: 2 tablespoons.
- Flour: 2 tablespoons.
- Salt and pepper powder: to taste.
Method:-
Step 1: Mix flour and butter (Roux).
Place a small saucepan on the stove and melt the butter.
Add the breadcrumbs, reduce the heat and cook for 1-2 minutes (until the flour mixture is light brown).
Step 2: Add the meat juices.
Add the meat juices left in the roasting pan (removed and strained from the vegetable pieces) to the flour mixture a little at a time.
Stir quickly with a whisk or spoon to prevent lumps.
Step 3: Cook until thickened.
Cook over low heat until the mixture boils.
Continue to cook, whisking and stirring, until the sauce thickens to your desired consistency (3-5 minutes).
Step 4: Season to taste.
Before removing from the heat, taste and add salt and pepper powder if necessary.
